As a vegetarian, I would almost be forced to like beans. But actually, I love them! I remember taco day at work was awesome because someone would always make me refried beans. Foul is very similar to that or a sort of chili.

This can be eaten with bread or rice, as a side to breakfast, lunch or dinner. We ate this with the Zahawiq too.

foul-2Ingredients:

1 can fava beans
small onion, chopped
3 garlic cloves, minced
1 chili pepper, chopped
1 fresh tomato, chopped small
4 T. oil
1/2 t. salt
1 bell pepper chopped
a pinch of cumin,
coriander
black pepper
a cup of water

Instructions:

  1. Cook onions, chili and garlic in oil over medium heat until browned.
  2. Add tomatoes and cook about 10 minutes. Add spices.
  3. Mash or puree the beans.
  4. Add beans to the pan with a cup of water. Cook on medium for 20 minutes. Stir occasionally. Add water if necessary.

I’ve never been the greatest cook ever but sometimes the necessity of eating takes over. This project is cool because it’s encouraging me to try new dishes and expand my kitchen horizons. But for this day I was slightly done with complicated food and Foul was the answer. So simple and so delicious! I love it!
