These pierogies were the best part of Polish night in my opinion. Compared to the frozen kind my roommate used to cook for us, these took a long time! But it was worth it and this is one recipe I’ll put in the back of my head to pull out for special occasions.
2 cups flour
1/2 cup water
1/2 teaspoon salt
3 large, peeled potatoes
8 ounces shredded cheddar cheeese
additional chopped onions.
- Mix flour, water, egg and salt together in large bowl. Knead on floured surface until smooth. Cover the dough with the bowl and let sit for 30 minutes.
- Cut potatoes in cubes. Boil for 15 minutes or until soft. Drain and add cheese. Let cheese melt and then fold together.
- Roll out dough on floured surface until 1/8 inch thick. Cut out circles about 3 inches across by pressing the rim on a glass into the dough. Put a teaspoon of filling on each circle. Fold in half and pinch edges to seal.
- Drop in boiling water and simmer for 8 minutes. Drain and fry in butter until golden. Add chopped onion to pan.
