Pierogies with potato and cheese


These pierogies were the best part of Polish night in my opinion. Compared to the frozen kind my roommate used to cook for us, these took a long time! But it was worth it and this is one recipe I’ll put in the back of my head to pull out for special occasions.


2 cups flour
1/2 cup water
1 egg
1/2 teaspoon salt
3 large, peeled potatoes
8 ounces shredded cheddar cheeese

additional chopped onions.



  1. Mix flour, water, egg and salt together in large bowl. Knead on floured surface until smooth. Cover the dough with the bowl and let sit for 30 minutes.
  2. Cut potatoes in cubes. Boil for 15 minutes or until soft. Drain and add cheese. Let cheese melt and then fold together.
  3. Roll out dough on floured surface until 1/8 inch thick. Cut out circles about 3 inches across by pressing the rim on a glass into the dough. Put a teaspoon of filling on each circle. Fold in half and pinch edges to seal.
  4. Drop in boiling water and simmer for 8 minutes. Drain and fry in butter until golden. Add chopped onion to pan.
